Your customers can select "Cash Payment upon Pickup" as payment method within the Magento checkout. Cash Payment is only shown if "In-Store Pickup" has been selected beforehand as the desired shipping method.
Dependencies between shipping & payment method
Simply define dependencies between a shipping and payment method by mapping them accordingly. This way only the linked payment methods will be shown after a shipping method has been selected.
